Summary
Fresh (chilled) fruit juice consumption has been developing in France since 1985, slightly behind the British and American markets. Two main product types are presented: freshly-squeezed fruit juice (maximum storage-life of 10 days at 0-4 deg C) and flash-pasteurized juice (minimum storage life of 24 days). The growth in the production of freshly-squeezed fruit juice, the only one that tastes near enough to the home-squeezed juice, needs new developments in fruit production, refrigeration and regulations.
