Determination of the effects of cryoprotecting proteins, extracted from the flesh of fish from polar regions, on chilling and freezing of meat. A comparison of the structure of frozen or chilled meat, previously treated in solutions containing these proteins. In every case, antifreeze proteins have no effect on chilled meat samples.
