Summary
The authors present various research programmes launched by Brussels within the European framework. All of these programmes, and the FAIR programme in particular, are aimed at improving food safety and measuring or rapidly detecting quality or defects (particularly bacteriological) of foodstuffs. A programme devoted to health, foodstuffs and the environment (spread over the 1999-2003 period) is outlined.
