Summary

The author examines the impact of refrigerating processes on public-health maintenance, the cost of living, social development, diets and worldwide trade in perishable foodstuffs. He discusses the changes underway in agriculture in which it is the yields that must satisfy the requirements of industry, and no longer the other way around. Finally, he mentions the difficult problem that the coming elimination of certain CFCs has created for refrigerating manufacturers.
