THE MARKET FOR SHELLFISH IS PRESENTED ; THERE HAS BEEN A 15% INCREASE IN LARGE-AND MEDIUM-SIZE STORES, AN INCREASE IN FRANCE'S EXTERNAL-TRADE DEFICIT, AND AN INCREASE IN EXPORTS. THE CONSUMPTION OF SHRIMPS -TROPICAL OR SCANDINAVIAN WILD SHRIMP, BUT MAINLY FARM SHRIMPS -CONTINUES TO RISE. CRAYFISH IS NOW BOUGHT THROUGHOUT THE YEAR. THE MARKET FOR LOBSTERS IS GROWING, WHILE THE MARKET FOR FROZEN NORWAY LOBSTERS IS SHRINKING. SNOW CRABS HAVE DECLINED DUE TO THE SUCCESS OF SURIMI. J.L.
