THE INFLUENCE OF STORAGE, FREEZING AND THAWING ON FILLET YIELD OF FISH.

Summary

IT IS NECESSARY TO MAINTAIN PRODUCTION QUALITY. THE TREATMENT OF FROZEN RAW MATERIALS DURING OFF-SEASONS IS INCREASINGLY SIGNIFICANT. LABORATORY TESTS GIVE GOOD RESULTS AS REGARDS QUALITY AND YIELD. AT INDUSTRIAL LEVEL THE RESULTS VARY, MAINLY WITH REGARD TO YIELD. LARGE SCALE TESTS SHOW THAT THE DECREASE IN FISH FILLET YIELD MAY REACH 1 TO 1.5% AS COMPARED TO THE PROCESSING OF FRESH FISH. FREEZING RATE DOES NOT APPEAR TO HAVE A GREAT INFLUENCE ON YIELD. QUALITY, PROCESSING AND STORAGE PRIOR TO THE INITIAL FREEZING STAGE PLAY A LARGE ROLE. WHEN THAWING, IT IS NECESSARY TO PREVENT TOO HIGH TEMPERATURES IN THE THINNER PORTIONS.
