Summary
THE REAL FREEZING TIME OF SMALL FRUIT AND VEGETABLES, IN A FRE EZER WITH A FLUIDIZED BED, IS SIGNIFICANTLY LONGER THAN THE ONE CALCULATED WITH THE PLANK FORMULA. THUS, A CORRECTION IS PROPOSED FOR A BETTER ESTIMATION OF THE FREEZING TIME OF SPHERICAL PARTICLES. A FORMULA IS PROPOSED ; THE ACCURACY OF THE CALCULATION WAS CONFIRMED BY EXPERIMENTS CARRIED OUT ON PEAS AND CORN GRAINS WHICH WERE FROZEN IN AN INDUSTRIAL FREEZER WITH A FLUIDIZED BED.
