Summary

Technology has caused a tremendous resurgence in the popularity of liquid nitrogen. It is replacing carbon dioxide in many applications and competing successfully with mechanical refrigeration. Improvements in the storage tanks, distribution trailers, distribution piping, and in application equipment have all contributed to the increase in efficiency. The proliferation of programmable logic controllers based operations has also reduced inefficiencies due to employee intervention. Additionally, while food values have increased, liquid nitrogen costs have not kept pace, making it more economically beneficial than in the past.
