Summary

A PROCESS DESCRIBED AS A < SUCTION METHOD > FOR THE CONTINUOUS HYGIENE CONTROL OF VACUUM-PACKED BEEF IS DESCRIBED. A SILICON-RUBBER BLOCK IS ATTACHED TO A PLASTIC BAG ENABLING MEAT JUICE TO BE REMOVED AND EXAMINED SEVERAL TIMES WITHOUT LOSS OF VACUUM. THE SUITABILITY OF THE METHOD WAS TESTED IN TWO EXPERIMENTAL SERIES. THE RESULTS ARE GIVEN -PARTLY IN THE FORM OF A GRAPH -AND ARE DISCUSSED.
