Summary

CLOSER CONSIDERATION OF THIS RATHER LONG TRANSPORT CHAIN SHOWS THAT A NUMBER OF LINKS ARE CRITICAL, PARTICULARLY ON THOSE SPOTS WHERE HUMAN HANDLING OF THE PRODUCTS TAKES PLACE. AN APPROACH IS GIVEN OF THE TEMPERATURE HISTORY OF DEEP FROZEN PRODUCTS BASED ON MEASUREMENTS AND CALCULATIONS FROM CENTRAL FREEZING STORE VIA DISTRIBUTION DEPOT TO THE SHOP'S RETAIL CABINETS. THE TEMPERATURE HISTORY OF THE PRODUCT LEARNS SOMETHING ABOUT THE QUALITY OF THE PRODUCT, ONLY IN CASE THE TIME-TEMPERATURE TOLERANCE IS KNOWN.
