Summary

THE ACTIVITY OF THE TOTAL LDH AND ITS ISOENZYMES WAS EVALUATED IN THE DIAPHRAGM OF FRESH, CHILLED AND FROZEN MU THE RELATIVE ACTIVITIES OF THE ISOENZYMES OF THE LDH WERE STUDIED BY ELECTROPHORESIS, DURING CHILLING AT 277 K FOR 6 DAYS AS WELL AS DURING STORAGE UNDER FROZEN CONDITIONS. AFTER 3 DAYS OF CHILLING, THE ACTIVITY OF THE LDH1 PROGRESSIVELY INCREASES AND THE ONE OF THE LDH5 PROGRESSIVELY DECREASES. A 10 DAY FREEZING PROGRAMME AT -10, -20 AND -80 DEG C DID NOT GIVE ANY SIGNIFICATIVE VARIATION IN THE ENZYME ACTIVITY.
