Summary

RAW, COOKED OR FRIED LIVERS WERE STORED AT -20 DEG C UNDER VACUUM OR UNDER NITROGEN AND ANALYZED, AT REGULAR INTERVALS, BY HPLC FOR THEIR FOLATE CONTENT. SEVERAL DERIVATES OF FOLIC ACID, INCLUDING TETRAHYDROFOLIC ACID AND DIHYDROFOLIC ACID, WERE THUS IDENTIFIED AND TITRATED. THE THERMOSTABILITY OF FOLATES AND OF THEIR OXIDATION PRODUCTS AND THEIR HISTORY DURING COLD STORAGE WERE STUDIED. THE FOLATE CONTENTS FOUND BY HPLC ARE HIGHER THAN THOSE OBTAINED WITH THE MICROBIOLOGICAL TEST ON LACTOBACILLUS CASEI.
