SLOW FREEZING AT A RATE OF 1 K/MIN IN THE PRESENCE OF 20% GLYCEROL HAS BEEN FOUND TO BE THE BEST REGIMEN OF CRYOPRESERVATION. THE VIABILITY OF YEASTS APPROACHED 100%, THEIR TECHNOLOGICAL PROPERTIES REMAINED STABLE UPON LONG-TERM STORAGE IN LIQUID NITROGEN.
