Summary

STRAWBERRIES WERE FROZEN AT DIFFERENT AIR VELOCITIES IN AN AIR BLAST FREEZER AT 243 K (-30 DEG C). THE FREEZING TIME WAS TAKEN AS THE TIME REQUIRED TO LOWER THE TEMPERATURE AT THE GEOMETRIC CENTRE OF THE SAMPLES TO 263 K (-10 DEG C). THE FREEZING TIMES MEASURED WERE COMPARED WITH VALUES CALCULATED USING PLANK'S EQUATION. THE TIMES CALCULATED WERE FOUND TO BE HIGHER THAN THOSE FOUND EXPERIMENTALLY.
