Summary

A novel time-temperature indicator using phospholid-phospholipase was developed to monitor quality change on frozen foods during storage. The indicator was more reliable than the lipase system and monitored quality changes of frozen pork during storage. It was designed for reactions at sub-zero temperatures, contains glycerol and sorbitol as anti-freeze reagents, and shows distinctive colour changes according to pH by mixing bromothymol blue, neutral red, and methyl red. It had an activation energy of 32.12 kilocal/mol, suitable for many food reactions.
