Summary

Time-temperature indicators (TTIs) record the time-temperature history using biological, physical or chemical mechanisms involving time and temperature. TTIs can provide an indication of the remaining shelf-life of packaged perishable foods. The paper reviews the various types of devices that are available and their uses in food production, storage and distribution including retail chain scenarios. It also discusses the limitations of TTIs and the logistic problems that have so far prevented a wide-spread use of TTIs in retail situations.
