Summary
Several varieties of tomato are examined after picking representing the following production categories: long-life, greenhouse production, field-grown tomatoes. Behaviour after picking at different temperatures (12, 18, 24 deg C) is judged by measuring firmness and the indices in terms of variety/stage of picking interactions. More specific information such as ethylene emission and biochemical composition complete the data on the characteristics of these tomatoes.
