Summary

ABSOLUTE PRESSURE, IN THE RANGE FROM 2.5 TO 135 PASCAL, HAVE NO INFLUENCE ON FREEZE-DRYING CYCLE. THE SHORTEST CYCLE IN VACUUM DRYING HAS BEEN OBTAINED AT THE HIGHEST PRESSURE ASSAYED (4,000 PASCAL). THE MOST FAVOURABLE LOAD IS 5.5-6.0 KG/M2. BASED ON RESULTS OBTAINED, A COMBINED SYSTEM, IN WHICH CARROT JUICE IS VACUUM DRIED TO 60% OF TOTAL SOLIDS AND SUBSEQUENTLY FREEZE-DRIED, IS PROPOSED.
