THE DAMAGE WHICH MAY BE DONE TO POTATOES WHICH ARE HARVESTED AND HANDLED AT TEMPERATURES BELOW 7 DEG C IS POINTED OUT. CONSUMER PREFERENCES WITH RESPECT TO POTATOES ARE EXPLAINED. COOLING POTATOES WILL NOT IMPROVE THE ATTRIBUTES REQUIRED BY CONSUMERS. THERE IS NO DEMAND FROM RETAIL OUTLETS FOR COOLED POTATOES, AND THEN THEINCREASED COSTS OF COOLING ARE EXPLORED. FINALLY, THE SMALL AMOUNT OF HEAT GENERATED BY STORED POTATOES COMPARED TO OTHER VEGETABLES IS DISCUSSED, AND IT IS CONCLUDED THAT THERE IS NO CASE FOR COOLING POTATOES.
