THE PAPER IS CENTERED ON THE RESULTS OF EXPERIMENTS AT THE JAPAN MARINE RESEARCH CENTER WHERE RESEARCH AND DEVELOPMENT WORK IS UNDERTAKEN. WITH CALCIUM CHLORIDE BRINE IMMERSION FREEZING IT IS NECESSARY TO ENSURE UNIFORM TEMPERATURE TREATMENT DURING THE FREEZING PROCESS IN ORDER TO AVOID FREEZE FRACTURE OF FOOD PRODUCTS. IT IS ANTICIPATED THAT THE SYSTEM UNDER DEVELOPMENT WILL GIVE AN INNOVATIVE IMPACT ON THE FREEZING AND PROCESSING OF FOODSTUFFS.
