THE STUDY WAS TO MEASURE THE INTERNAL PRESSURE WHICH CAUSES GA PE AND HEAVE IN BODIES FROZEN BY IMMERSION IN OR SPRAYING WITH CALCIUM CHLORIDE BRINE. GAPE AND HEAVE IN FROZEN TUNA IS CAUSED BY THE INTERNAL PRESSURE, BUT THIS PRESSURE OR STRESS CAN BE RELEASED BY A THERMAL EQUALIZING PROCESS DURING THE FREEZING PHASE.
