A comparison between air cycle and conventional freezing.

Summary

The paper explains the basis of air cycle refrigeration and why it should be developed for food freezing. It then presents design data for an air cycle plant for freezing beef burgers, which shows that the freezing time can be reduced to 66% of that in a conventional ammonia freezer. A comparison between ammonia, air cycle and liquid nitrogen freezers shows that air cycle compares well on freezing time, weight loss and cost.
