A comparison of three models for predicting heat and weight loss from beef sides during chilling.

Summary
Three models have been developed by the authors to predict heat load and weight loss during beef chilling. Specific modelling objectives were: model simplicity, accuracy, minimal computing time and applicability to industrially used conditions. A brief overview of each of the models is presented. A comparison of model performance is made, revealing that each model offers unique advantages with regard to one or more of the objectives. The final choice of model depends on individual requirements and computing facilities.
