A SIMPLE FOOD FREEZING AND THAWING TIME PREDICTION METHODOLOGY IS DESCRIBED. IT CONSISTS OF PREDICTIONFORMULAE FOR THE ONE-DIMENSIONAL INFINITE SLAB SHAPE UNDER SIMPLE INITIAL, FINAL AND BOUNDARY CONDITIONS ; MODIFICATIONS TO ADJUST PREDICTIONS FOR MORE COMPLICATED CONDITIONS ; AND A SHAPE FACTOR. THE METHOD ACCURATELY PREDICTS FREEZING AND THAWING TIMES FOR A WIDE RANGE OF SHAPES AND CONDITIONS.
