Estimation of freezing time for a food body by an inverse method. 1. Numerical solution model.

Summary

A robust system for estimating time-temperature history during food freezing was developed. The system does not require the knowledge of thermal properties of the food being frozen. The system collects the time-temperature data of the food body in the early stages of the cooling operation, analyzes these data to estimate the thermal parameters, and predicts the time-temperature profile inside the food body for the remainder of the freezing process.
