Summary
The effective use of hazard analysis schemes is emphasized, but many important issues such as environmental, economic, legal and safety hazards are omitted in HACCP schemes. Food process hazards are identified, and the identification of hazard modes and conditions from food contamination are given in tabular form. A model is also given for identification of hazard points in domestic food preparation. The author concludes that the food industry should develop more general and complete analysis models than HACCP. G.R.S.
