PRESENTATION OF THIS SIMPLE, AND CHEAP UNIT COMPRISING MAINLY A CRYSTALLIZATION COLUMN AND A HEAT EXCHANGER. A RECOVERY RATE OF 90% OF SOLIDS CAN BE OBTAINED WHEN CONCENTRATING FRUIT JUICES (12 TO 37.5 DEG BRIX). THE COST OF THE PROCESS IS LOWER THAN THAT OF OTHER SYSTEMS BY 35%. (Bibliogr. int.
