A physical model of air flow in beef chillers.

Summary

A two-dimensional (height and length) and 1/10 scale model of a quick chilling tunnel for half beef carcasses has been constructed between two perspex sheets. Water, which contains oxygen and hydrogen bubbles, generated by small electrodes placed here and there, flows between the sheets and the carcass models. The bubble track illustrates the real air flow direction under conditions of similarity. Different configurations can be set up very quickly; this simulation shows interesting possibilities. The model is portable.
