Summary
The refrigeration required needed to bring a carcass core from 41 to 7 deg C is 90 W/pig half carcass, while currently available in-transit refrigeration units can supply only 38 W/half carcass. In addition, inspections of refrigerated transport vehicles have revealed that meat hygiene standards are frequently disregarded. Therefore, alternatives to transport temperatures set by the EC do not seem to be a viable proposition at this time, in the authors' view.
