COMMENTS ON THE PAPER BY R. L. MCBRIDE AND K. C. RICHARDSON (SEE BULL. IIR, ABSTR. 82-1989), CONCLUDING THAT FREEZING IS NOT SUITABLE FOR EXTENDING THE STORAGE LIFE OF HAMS, UNFAVOURABLY ALTERING ORGANOLEPTIC CHARACTERISTICS. ON THE OTHER HAND, THE CHARACTERISTICS REMAIN SATISFACTORY FOR HAMS STORED WITHOUT PACKAGING THREE WEEKS AT 278 K (5 DEG C) AND ELEVEN WEEKS IF THEY ARE PACKAGED UNDER VACUUM. G.G.
