COMMERCIAL POULTRY CHILLER WATER WAS EXTRACTED BY THE CLOSED-LOOP-STRIPPING TECHNIQUE. 12 SATURATED AND UNSATURATED ALIPHATIC ALDEHYDES HAVING 5 TO 11 CARBONS WERE IDENTIFIED. HEXANAL AND NONANAL CONSTITUTE ABOUT HALF OF THE ALDEHYDES FOUND. THE IDENTIFIED ALDEHYDES ALSO ARE THE PRIMARY AUTOXIDATION PRODUCTS OF UNSATURATED FATTY ACIDS. THESE ALDEHYDES ARE INDICATIVE OF AN EXTENSIVE AUTOXIDATION. THEIR EFFECT ON THE QUALITY AND SHELF-LIFE OF THE POULTRY PRODUCTS IS UNKNOWN.
