THE EFFICIENCY OF SOME FREEZING MEDIA IS INDICATED, EG BRINE AT A TEMPERATURE OF 243 K (-30 DEG C), TO IMPROVE THE FREEZING OF TUNA ON BOARD SHIP. THE CHARACTERISTICS OF THE THREE-CONSTITUENTS BRINE, RECOMMENDED FOR THIS USE, ARE GIVEN. THE RESULTS OF TESTS CARRIED OUT ON TUNA FROZEN IN BRINE WITH THESE 3 CONSTITUENTS, AND DURING COLD STORAGE, ARE PRESENTED.
