Summary
By precooling fish at 0-2 °C, it is possible both to maintain the product quality and to improve the cost-effectiveness of the freezing systems by 10 to 12%, thanks to the use of seawater and scale ice. To illustrate this, the amount and type of energy required to operate the refrigerating systems are compared.
