Summary

MODERN INDIVIDUAL QUICK FREEZER FOR PRAWN USING NITROGEN AND LIQUID R12 AND REFRIGERATED TRANSPORT VEHICLE USING LIQUID NITROGEN AND SOLID CARBON DIOXIDE (DRY ICE) HAVE BEEN DESCRIBED AND THEIR MERITS HAVE BEEN COMPARED WITH THE CONVENTIONAL MECHANICAL SYSTEM. A SHORT DISCUSSION HAS ALSO BEEN INCORPORATED ILLUSTRATING THE TECHNICAL ADVANTAGES OF CRYOGENIC SYSTEM OF FREEZING PRESERVATION OF SEA-FOODS. IT HAS BEEN SHOWN THAT REFRIGERATION CAPACITY OF DRY ICE IS THE HIGHEST BUT LIQUID NITROGEN IS MORE IDEAL FOR FISH FREEZING. IT TAKES ABOUT 1.25 KG OF LIQUID NITROGEN FOR FREEZING ONE KG OF FISH AND PRAWN UNDER NORMAL CONDITION AND TAKES ONLY LESS THAN 10 MINUTES TO FREEZE BY INDIVIDUAL QUICK FREEZER. CRYOGENIC REFRIGERATION IS COMPARATIVELY COSTLIER THAN CONVENTIONAL MECHANICAL SYSTEM.
