Summary
Sensory analysis of apricots by a trained panel provides new insight into quality criteria. The results obtained on the Goldrich and Hargrand varieties highlight the complementarity of the sensory and analytical approaches. They also underscore the considerable influence that the degree of ripeness and the time between harvest and consumption have on the perception of quality, which is not always measurable. The perception of firmness, acidity and sweetness is analysed.
