Summary

Temperature control in the cold chain is well defined from the regulatory point of view. However, the current rules do not take into account the dispersion of product temperatures, and the behaviour of microorganisms in variable environments, all along logistics and just after distribution. But, the new rules of the international trade and the new European regulatory approach are based on the risk notion, and impose the development of methodologies for assessing risks. The approach described in the paper is aiming at developing a method making it possible to assess microbiological risks in the entire logistic circuit, from production to consumption.
