INVESTIGATIONS WERE CARRIED OUT TO ASSESS THE MICROBIOLOGICAL QUALITY OF 37 SAMPLES OF ICE CREAM ON SALE IN BOLOGNA. TOTAL VIABLE COUNT, TOTAL COLIFORMS, STAPHYLOCOCCUS AUREUS AND SALMONELLA WERE DETERMINED. THE RESULTS OBTAINED ARE COMPARED WITH THOSE OF OTHER INVESTIGATIONS AND WITH THE LEGAL MICROBIOLOGICAL STANDARDS.
