IN 4 SLAUGHTERHOUSES, USING AIR CHILLING, BROILERS WERE SAMPLED AFTER PLUCKING, AFTER EVISCERATION, AFTER SPRAY-WASHING, BEFORE AND AFTER CHILLING. WITH EXCEPTION FOR ONE PLANT, TOTAL AEROBIC COUNTS, IMMEDIATELY AFTER PLUCKING, WERE VERY UNIFORM AND AMOUNTED TO ABOUT 100,000/G. AFTER EVISCERATION AN INCREASE OF THE NUMBER OF MESOPHILES AS WELL AS THE NUMBER OF ENTEROBACTERIACEAE COULD BE NOTICED. AFTER SPRAY-WASHING A NON SIGNIFICANT DECREASE OF THE AEROBIC COUNT WAS FOUND. 94% OF ALL EXAMINED DRESSED BROILERS WERE CARRYING MORE THAN 2.00/GRAM PSEUDOMONAS. FOR ALL SAMPLING STAGES, THE NUMBER OF SALMONELLA POSITIVE BROILERS AMOUNTED TO 31, 44, 26 AND 38%.
