Behaviour of Aeromonas hydrophila in vegetable salads stored under modified atmosphere at 4 and 15 deg C.

Summary

Storage at 4 deg C inhibits growth of A. hydrophila but does not kill it. At 15 deg C, the bacteria develop rapidly during the first 24 hours of storage and then more slowly.
