Summary

IN VACUUM-PACKED BEEF WITH A PH LOWER THAN 5.8, THERE WAS NO CHANGE IN THE LISTERIA COUNT DURING STORAGE BUT THE LACTIC ACID BACTERIA BECAME THE DOMINANT FLORA WITHIN A FEW DAYS. VACUUM-PACKED BEEF WITH A PH HIGHER THAN 6.0 UNDERWENT AN INCREASE IN THE LISTERIA COUNT OF 1 POWER OF TEN DURING THE FIRST WEEK AT 275 AND 277 K (2 AND 4 DEG C). AT 280 K (7 DEG C), L. MONOCYTOGENES INCREASED 1 POWER OF TEN IN 3 DAYS AND 3 POWERS OF TEN AT 283 K (10 DEG C).
