IN VACUUM-PACKED SAMPLES, Y. ENTEROCOLITICA AND A. HYDROPHILA DEVELOP AT STORAGE TEMPERATURES BETWEEN 271 TO 283 K (-2 TO 10 DEG C), AT RATES GREATEROR EQUAL TO RATES OF THE CONTAMINATING FLORA. THE GROWTH OF L. MONOCYTOGENES IS ONLY SEEN, UNDER THESE PACKAGING CONDITIONS ABOVE 271 K AFTER A LONG LAG TIME.
