FROM THE TESTS CARRIED OUT ON TWO EGGPLANT CULTIVARS, IT APPEARS POSSIBLE TO SUBSTITUTE FOR BLANCHING 5 MIN. IMMERSION INA POTASSIUM METABISULPHITE (0.35%) AND CITRIC ACID (0.20%) SOLUTION IN ORDER TO PREVENT THE BROWNING OF THE PULP AFTER FREEZING.THIS TREATMENT APPEARED PREFERABLE TO IMMERSION IN A POTASSIUM METABISULPHITE-SODIUM CHLORIDE SOLUTION, AS SHOWN IN SEVERALTABLES AND A GRAPH, COMPARING WITH THE CONTROLS THE ORGANOLEPTIC CHARACTERISTICS OF EGGPLANT AFTER 12 MONTH STORAGE AT 253 K(-20 DEG C). ITS ADVANTAGE IS A MARKED REDUCTION OF SO2 DOSES TO BE USED IN SO FAR AS CITRIC ACID CONTRIBUTES IN PREVENTINGENZYMIC BROWNING (ACTIVITY OF POLYPHENOLOXIDASE), NOT ONLY BY DECREASING THE PH TO VALUES LOWER THAN 6-7, BUT ALSO BY FAVOURINGTHE DEVELOPMENT OF GASEOUS SO2, WHICH HAS AN ANTI-OXYGEN ACTIVITY.THE EFFICIENCY OF THE TREATMENT REMAINS UNALTERED WHEN KEEPING EGGPLANTS IN THE FROZEN STATE, TO BE COOKED WITHOUT THAWING.IF THEY OCCUR, MAINLY IN THE VICINITY OF SEEDS.
