Changes in chlorophyll and carotenoid contents during cold and controlled atmospheres storage, and characterization of the carotenoids in the peel of "Fuji" apple fruit.

At harvest, apple cv. Fuji peel contained low concentrations of chlorophyll and carotenoids. Fruits were stored at either 20 or 0 deg C in controlled atmospheres (ratios of CO2:O2 of 1:1 or 3:1) in the cold. The concentration of chlorophyll decreased by 60% following storage at 20 deg C for 2 months; this marked decrease was not observed in the others treatments. The content of total carotenoids increased by 230% following storage at 20 deg C for 2 months; no changes were observed following storage in the cold or in controlled atmospheres for 2 and 4 months.
