Summary

At harvest, apple cv. Fuji peel contained low concentrations of chlorophyll and carotenoids. Fruits were stored at either 20 or 0 deg C in controlled atmospheres (ratios of CO2:O2 of 1:1 or 3:1) in the cold. The concentration of chlorophyll decreased by 60% following storage at 20 deg C for 2 months; this marked decrease was not observed in the others treatments. The content of total carotenoids increased by 230% following storage at 20 deg C for 2 months; no changes were observed following storage in the cold or in controlled atmospheres for 2 and 4 months.
