Summary

Apple cv. Fuji fruits were stored in air at 20 or 1 deg C or in a modified atmosphere (20% CO2) or controlled atmosphere (3% CO2-1% O2 or 1% CO2-1% O2) at 1 deg C. During 2 months of storage at 20 deg C, the concentration of beta-carotene decreased, whereas total carotenoids increased. Beta-carotene also decreased under the other storage conditions, although total carotenoids showed little change. Concentrations of Lutein, Zeaxanthin, Violaxanthin and neoxanthin, were studied.
