Summary
Freezing and frozen storage of Brussels sprouts, both blanched and unblanched, resulted in dramatic changes in nitrate and nitrite contents, but had no practical effect in the case of carrot. The nitrite content in carrot increased slightly at the beginning of the experiment but did not exceed prescribed limits.
