THE PAPER SURVEYS THE INVESTIGATIONS MADE ON FOUR WINTER PEAR CULTIVARS, OF THE CHANGES IN FIRMNESS, SOLUBLE DRY MATTER, TOTAL GLUCIDES, TITRABLE ACIDITY AND ASCORBIC ACID DURING STORAGE AT 273.5 K (0.5 DEG C) AND SUPPLEMENTARY RIPENING BETWEEN 291 AND 293 K (18 AND 20 DEG C). THE PHYTOSANITARY DEVELOPMENT OF PEARS AND THEIR MASS LOSS ARE GIVEN.
