THE AUTHOR DETERMINED THE CHEMICAL COMPOSITION OF CHICKEN OFFALS STORED IN THE FRESH CONDITION AT 274 K (1 DEG C) AND THE STORAGE LIFE OF PACKAGED CHICKEN LIVERS FROZEN TO 243 K (-30 DEG C) FOR 2 1/2 HRS, THEN STORED DURING AN OVERALL TIME OF 18 MONTHS AT 258 AND 252 K (-15 AND -21 DEG C). THE STORAGE LIFE OF CHICKEN LIVERS IS ESTIMATED AT 12 MONTHS. PERFECT PACKAGING AND MAINTAINING A CONSTANT STORAGE TEMPERATURE ARE THE CONDITIONS REQUIRED FOR PRESERVATION DURING THAT TIME. R.R.
