Summary

The influence of pressure and temperature (-2 to 0 and 2 to 4 deg C) on mechanically separated skinless chicken backs was studied and yield, approximate composition, bone, calcium content and bone particle size were measured. In both temperature ranges, higher pressures corresponded to higher yields, although yield differences between trials were observed in the lower temperature range.
