Chilled and frozen biological materials: the lesson of roses.

Summary

When chilled and frozen foods are properly processed and stored they are nutritious and of high quality. However, the inconsistent sensory quality and nutritional value of these types of products, and the excessive spoilage of the more perishable refrigerated foods provides an indication that all is not well. Two major actions are imperative. First, recommendations for the storage and handling of products preserved by these means must be adhered to more closely. Second, technological information that is available must be applied more rapidly than has occurred in the past, and transfer of technology from allied fields must increase.
