Summary

In this paper, the shelf life of two green asparagus varieties, Taxara and UC-151, cultivated under the Quality Specific Appellation "Espárragos de Huétor Tájar", stored under refrigerated and controlled atmosphere conditions, has been established through texture physical parameters, fibre content and sensorial properties of the product.
